Our Christmas Hams are carefully graded Rare Breed Black Berkshire Pork from a boutique producer in Byron Bay. The Black Berkshire breed is known for its intense marbling and higher fat content keeping the meat moist during the cooking process. Once received at Haverick Meats, our Boneless Leg Hams are double smoked and cured to retain moisture. It’s this method that gives our hams a caramelised outer crust and rich smoky flavour.
